Although Germany's going through a slight cooling off period right now, temperatures will rise by weekend's end, and it'll be back to the desire for fresh, flavor-filled summer dining in line with the glorious days of summer we've been experiencing for the weeks prior to this one. In our New Urban Kitchen fish is usually on the menu for spring and summer months- and in the spirit of the traditional Soul Food Sundays of our American childhood, we've tried an updated version of a an old favorite, BBQ Shrimp, just in time for your next Sunday supper. In a fresh take on a recipe revamped by Chef Jernard Wells, star of America's popular TV Food Network, BBQ shrimp is served as a light, but flavorful and filling salad course high on the nostalgia factor (using a modern interpretation of the classic BBQ & slaw combo), but is even higher in healthiness with it's choice of antioxidant-rich cabbages and low in calories. The recipe is taken directly from Chef Jernard's latest cookbook, Southern Modified, co-written with actress Louisiana born actress (and Tyler Perry muse) Denise Bouttè. In order to find a bulk amount of shrimp that won't break the bank, if you don't have an Asian supermarket nearby, we suggest the frozen food section at EDEKA: the store brand EDEKA frozen White Tiger shrimp runs 9,99 for 550 grams, or, look out full kilo bags from other brands ( of the Black Tiger or Argentinian variety) to run around 16,50 € - 20,00€ per kilo.
Chef Jernard's BBQ Shrimp Salad calls for the following ingredients:
3 C Red & White Cabbage
1/4 C Dried Cranberries
1/4 C Corn (we used canned)
1/4 C of Cotija or Feta cheese, crumbled
1/2 C BBQ Sauce (of good quality)
