Farm fresh eggs reinterpreted for foodies and healthy eaters: leave more time for your weekend with less time in the kitchen with simple, recipes using little more than the eggs in your fridge and a few simple ingredients. |
In case you won't be grilling this weekend, today's NUY 40+ YUM! post is inspired by light weekend eating using simple ingredients, and your standard carton of eggs. Check out the curation of our favorite go-to egg recipes below, casual enough for summer dining when you're in no mood to slave in the kitchen, but would like something tasty and satisfying. Our recipe edit depends heavily on store-bought prepared items to help you move along swiftly so you can spend more time at the dining table instead of an overheated kitchen. as always, click on the recipe or blog title to see the full recipe:

With a simple side salad of chopped cherry tomatoes in sea salt, herbs & olive oil, this easy POACHED EGGS & AVOCADO TOAST recipe from PINCH of YUM is light enough for a summer dinner but wonderfully filling. Sometimes we like to dress ours up with flaked Stremmelachs sprinkled on top. |

Popular in Isreal and throughout the Mediterranean, "Shakshuka" is a savory dish of eggs poached lightly in a stewed tomato sauce with onions, bell peppers, & hot pepper paste. While high in taste factor, it's incredibly light, and can either be eaten with toasted bread, or as we like it, with store-bought couscous or bulger salad (from PENNY, ALDI, or LIDL). Save time in this "express" version of EASY SHAKSHUKA from MY EVERYDAY TABLE using store-bought tomato sauce: we substitute the plain marinara/Napoli sauce in this recipe with Italian "Arrabiata" sauce, to give it a spicier, more authentic flavor comparable to the traditional recipe. Liberal sprinkles of chopped coriander take the flavor factor in this dish up to an entirely new level. |

Diced sweet potatoes fried up in a pan make a lovely companion to poached eggs. Try these LOADED SWEET POTATO FRIES from 40 Aprons with a poached egg & guacamole. We used store-bought yogurt dressing as a sauce, &skipped the barrage of spices needed for the potatoes by simply seasoning ours with salt & Garam Masala spice...because after all ...who has the time? |
Wishing You Happy Cooking This Weekend, Nuy Divas- 'Til Next Time,
